The Orellana is a fungus of the genus Pleurotus which has a high content of protein (40%), fiber, essential amino acids, vitamins B1, B2, as well as a good source of phosphorus, potassium and zinc. Its cultivation is done on sawdust in greenhouses; but it is necessary to warn that, if the temperature, humidity and luminosity are not kept adequate, it is difficult to obtain mushrooms continuously.
